Apple Pie: Fit, Sugar and Gluten-Free Recipe

Apple pie is a classic and I tried to create my fit version with no sugar and gluten-free. Tastes great!

For baking, I always try to use something different instead of white flour. Usually, it is milled oats or coconut flour. This time I tried to make -as fit as I can- Apple Pie with coconut flour. This recipe is quite easy and fast. The most difficult work is the dough for the crust because coconut flour is gluten-free, has a different texture, and the way you work with coconut flour is different.

Coconut flour contains no gluten, making it an option for people with certain conditions, such as celiac disease, wheat allergy, or non-celiac gluten sensitivity. Coconut flour has a diverse nutrient profile and may offer a range of health benefits. Also, offers a variety of nutrients, including healthy fats, is packed with fiber, which may help keep your blood sugar levels in check.

Coconut flour can be used in a variety of recipes, both sweet and savory. You can substitute it for other flours when making bread, pancakes, cookies, muffins, or other baked goods. Just remember that coconut flour tends to absorb more liquids than other flours. For this reason, it cannot be used as a one-to-one replacement. Remember that coconut flour tends to be denser than other flours and doesn’t bind as easily. That's why in this recipe you have to firm the dough into baking form by using your hands instead of using a roller.

Apart from no gluten, this recipe is also sugar-free. I used zero-sugar syrups and sweeteners. So, that's mean that this recipe is GUILT-FREE as well.

🥧Ingredients For Crust:

▪️1 cup coconut flour

▪️2 eggs

▪️1/4 tsp salt

▪️1/2 cup coconut oil or butter (room temperature)

▪️2 scoops of whey protein (I used Speculoos flavor @bulk)


🍎Apple Pie Filling:

▪️3 apples

▪️1 lemon (for juice)

▪️cinnamon and nutmeg

▪️nuts - as you wish (I did with almonds)


▪️no sugar syrup @skinnyfoodco flavor Gingerbread


🍎For the crust - Mix all liquid ingredients and add coconut flour, and protein.

STEP 2. 🍎Firm a dough - it is a little bit sticky and very fragile. Spread a little bit of oil/butter into your baking form and spill it out with coconut - I do this instead of using baking paper. Now, firm the dough by using your hands into the baking form. Don't forget to make higher edges. When it is ready, place it into over at 190°C for 8 minutes.

🍎In the meantime clean and cut your apples into thin slices and in the pan cook for a couple of minutes with +- 1 cup of water. When apples are soft, remove water and add cinnamon, nutmeg, nuts, and syrup - mix together and taste it to see how sweet, etc. it is.


🍎Replace apples into your baking forms. I did create little flowers from the rest of my dough for the top of my pie. Sprinkle erythritol over the top and place in the oven at 190°C for 25 min.

🍎After spread your egg yolk over the top and do another 5 min.

🥧The cake is about 10 smaller pieces.
