I am very impressed by chickpea sweet treats. Same as with beans, zucchini, sweet potatoes, or carrot. It may not sound as appetizing but believe me, I was never disappointed.
These chickpea blondies are full of nutrients and especially healthy fats. Although there is no flour or sugar and what else, it is sooo easy and delicious. This recipe is for 9 pieces/bars and they can be stored for up to 4 days as they are nicely moist. But in our home, they didn't last long.😁 Let's have a look at the recipe!
2 cans chickpea
200g blanched almonds - flour
50g peanut butter
150g low-fat Greek yoghurt
50-60g 85% dark chocolate
sweetener (as always, I use 0 calorie syrups from the Skinny Food co. get your 10% discount HERE)
Preheat oven to 180°.
Open the can of chickpea, rinse, drain and dry/rub the chickpeas in a clean towel to remove ALL the water or moisture. This is VERY important, or the blondies will be fragile and too moist.
Place the chickpea in the bowl of a food processor, add peanut butter, sweetener syrup, yoghurt, banana and cinnamon.
Blend at high speed for 1 minute or until smooth, and no big lumps are left.
Add in almond flour and process again at high speed for 15-30 seconds to blend evenly.
As the last ingredient add and stir pieces of dark chocolate - only half of your portion. The second half will come at the top at the end of the baking. This also prevents adding too many chocolate chips in the batter that will melt and turn your blondie into a brownie.
Spread the batter evenly onto the prepared baking dish.
Bake 20 - 30 minutes or until golden and crusty on top. And don't forget approx. 10 minutes before is done put the rest of the chocolate on the top.
Let it chill for at least 1 hour to firm up blondies and cool down as they can be fragile.
After you can also place them in the fridge and they will be even fudgier.
