Very light and very tasty strudel with poppy seeds and cherries. Check the ingredients! The most simple and macro-friendly recipe!
I love poppy seeds. It reminds me of my childhood because in Czech cuisine it is a very common ingredient in baking. Therefore, I decided to try this a little experiment. I was a little bit unsure if it will work because of the simple ingredients that I used. Anyway, let's look at it!
Ingredients for 2 medium size strudels
2 light mozzarellas
60g for strudel and 50g for filling of erythritol (zero-calorie sweetener)
120g fined poppy seeds
150g cherries - frozen
1 extra egg yolk
a cup of plant milk
Preheat your oven to 180 °C. In bowl mix mozzarellas, eggs, and erythritol with a hand blender until smooth texture. Transfer it on your sheet metal - I do not use any form, I take a baking paper and crook the rims all around, so the mixture cannot leak anywhere. Spread a little bit of oil across the paper and then your dough equally in a thin layer. Of course, depends on what size of sheet you use. However, remember you will roll it so it should be a larger size. When you are ready, put the mixture in the oven for 10 minutes.
The next step is filling the mixture. In the small pot mix fined poppy seeds, erythritol, and cinnamon at low heat and slowly add milk. Now again, the texture should not be too runny. Add milk enough that everything can absorb together and then let it chill.
When 10 minutes is gone, let the dough chill for a little bit because it is very hot and it was hard to work with that. 😅 Okay, let's replace our poppy seeds mixture, add cherries and roll it.
Strudel is ready to bake for 30 minutes. 10 minutes before the end spread the egg yolk and let it finish. I must say it is much better the next day when it is cold.
Very quick and very simple. I will definitely try and post some different variations for you.
