Protein CARROT cake. FitCAKE Recipe🥕

Who doesn't like carrot cake? Always very light, great flavour of spices and cinnamon, chunks of walnuts with fresh cream on the top. Yummy!🥕

This recipe is my favourite. It is macro-friendly, light, fresh, not too sweet, but enough to treat you. You need to definitely try this one!

🥕Carrot cake ingredients:

• 150g coconut flour

• 100g oatmeal flour

• 3 scoops of protein (I used from Bulk Powders flavour Speculoos)

• 4 eggs

• 4 medium carrots - grated

• 1 apple - grated

• 400ml plant milk (I used Alpro - coconut)

• lemon zest and lemon juice from 1/2 of lemon

• 100g walnuts

• cinnamon

• nutmeg

• ginger

• baking powder

🥕Cream ingredients:

• 200g light cream cheese

• 400g light cottage cheese

• lemon zest and lemon juice from 1/2 of lemon

• 2 scoops of protein

Mix all ingredients for cake properly - add spices (cinnamon, nutmeg and ginger), lemon juice and lemon zest by your own taste. Also, you can add honey if you with. Replace into the form (I have a middle size baking pan), bake for 45 min at 180•C, and then leave cool down.

Mix cottage and cream cheese with a hand blender properly together until it's smooth and add protein, lemon juice, and zest and replace on the top of the cake.
