The Recipe For The Best SUMMER ROLLS

Delicious, fresh, and light snack. Btw. I could eat that every day.



These SUMMER ROLLS or FRESH SPRING ROLLS, if you wish are refreshing, colorful, and they are a great snack for any occasion.



The first time I had these, it was back in Prague, Czech Republic (where I come from) in one of the Vietnamese street food bistros. I and my friends always went there when we had some catch-up.


Anyway, to try them home was a great idea. I am pretty sure I will do them when is some family or friends occasion too.


Another great thing about summer rolls is that you can use basically whatever veg, or fruit you like. Same with protein - you can use roasted chicken breast, prawns, tofu, beef fillet steak. Whatever mood you have, create your own. ♥



Ingredients You Need And You Can Use


  • Thick rice noodles

  • Rice paper

  • Baby gem salad

  • Carrot

  • Cucumber

  • Radish

  • Avocado

  • Mango

  • Bell pepper

  • Coriander

  • Mint

  • Sesame seeds

  • Spring onion

  • Red or green cabbage

  • Jalapeño or chili


But I saw much more inspiration that you can use for summer rolls.






Ingredients For Peanut Sauce


  • Peanut Butter (crunchy)

  • Tamari

  • Soy sauce

  • Oyster sauce

  • Fish sauce

  • Fresh diced garlic

  • Fresh diced ginger

  • Chili

  • Coconut milk


The reason why I don't write measures is simple - I don't know. 😂 I love the intense flavor so I do a lot of garlic, ginger, and chili, and only a teaspoon of coconut milk to make it nicely mild. But it is up to you how you will do that - you can also use honey for example.





How to Wrap Spring Rolls


Spring rolls can seem intimidating, but you’ll get the hang of it quickly, I promise. If you have folded a burrito before, you can definitely make spring rolls! If you are an inpatient in the kitchen like me, you will get a little patience training as well. Here is a few tips:


1) Make the base


Start by placing a few pieces of lettuce about one-third from the bottom of the circular wrapper. The width of your fillings will determine the width of the spring roll. You want to leave a couple of inches open on the two sides for wrapping purposes.


2) Pile on the ingredients


Then, add the remaining ingredients. The exact order doesn’t matter much. Just pile them on top, making sure to take up the proper width. It’s ok if the fillings spill upward. I try to leave the top one-third of the wrapper open for wrapping.


3) Roll the filling


Gently pull the bottom of the wrapper up and over the lower portion of the filling. Try to keep the fillings compact as you roll upwards, just until the fillings are enveloped.


4) Envelope the sides and roll them up


Pull each side over to enclose the filling. Continue wrapping upward until your spring roll is fully wrapped!




Today I do not provide macros, as I believe this is really guilt-free snack. However, don't forget the sauce - PB has high calories but it is soo delicious together. Well, enjoy!
